How do you rank them: Arantxa Sanchez, Jana Novotna, & Gabriela Sabatini?

Physically, Sabatini and Novotna were very gifted athletes but Arantxa made up through tenacity, a strong will and a superior tactical sense. I fully agree with your rankings.
