How do I say I love you back after my Pastor says he loves me?

My pastor is a really awesome person highly annointed of God and he only tells people this to who he SINCERELY means it to: I love you. Well, I have lowe self esteem, so everytime he says it I'm really shocked that WOW someone would love me especially the person I look up to the most in life. He and I always exchange hugs. Weel, everytime he says "I love you" I am so shocked that I dont have time to say it back. But I REALLY love him he's like a FATHER to me, of course I call him Pastor tho. But I love him more than this world, Jesus first of course, But IDK how to say it to him that I REALLY do love him and I don't want him to get the idea that I don't. Because I DO I TRULY DO love him he's alwatys there for me and is super sweet and gives me life advice. So How do I tell him, Can I tell him randomly like tomorrow at the Banquet in honour of him being the Pastor for 25 years? IDK I just really enjoy having him in my life and i dont want him to think i dont love him back.
